Why Rootsch
Rootsch comes from roots: where you come from, what feeds you, what lies beneath the surface. No coincidence — everything at Rootsch starts there: in the soil, in the season, in the people who make it.
II — Origins
Raised on rock 'n' roll
Bradley grew up on rock 'n' roll: the music, the rawness, the nerve. It never left — you taste it in his kitchen, unpolished where it can be and razor-sharp where it must be.
III — Started at the bottom
It began at a beach bar
No silver spoon: Bradley started at the bottom, at a beach bar by the sea. That's where he learned the basics — hard work, a feel for guests, and a love for what the sea brings.
IV — To the top
Sharpened at De Librije
From the beach to the highest level the Netherlands knows: De Librije. Technique, discipline and the patience to truly finish a dish — from the ground up.
V — Back to Zeeland
Back to his own ground
With that level behind him, Bradley returned to Zierikzee — not to copy anything, but to build something of his own: Rootsch. Fine dining and a relaxed bistro, both from one kitchen, both from here.
